I'm loving all of the fall recipes.
Have any of you made a Chili using pumpkin?? I found a recipe the other day and thought it looks fabulous. I'm going to try it this weekend. I'll let you know ;)
Taco Soup that is!!
Prep Time: 5 minutes, Cook Time: 10 mintues, Servings: 5-6
- 1 can Low sodium black beans (drained and rinsed)
- 1 can hot and spicy chili beans
- 1 can low sodium pinto beans
- 1 lb. lean ground beef
- 1 chopped onion
- 1 small can green chilies
- 1/2 cup jalapenos
- 1 can whole kernel corn
- 3 can diced tomatoes with green chilies
- 1 can diced tomatoes Italian seasoning
- 1 packet taco seasoning mix
- 1 packet ranch dressing mix
- In a medium skillet brown ground beef with chopped onion. Drain and set aside.
- In a large pot mix diced tomatoes, green chillies, and corn.
- Next, add ground beef and onions and black beans, chili beans, and pinto beans.
- Lastly, add in taco mix, ranch mix, and jalapenos and simmer on medium heat for 5-7 minutes.
- Serve hot and enjoy! Optional toppings include reduced fat sour cream and 2% Mexican cheese!

Taco soup is one of my FAVORITE fall time recipes. I love that we can get so many meals out of one recipe.

I had a fabulous weekend! I love spending quality time with my Husby. Friday night we relaxed, I cooked dinner and we went to the mall. Husby was in need of a new pair of sunglasses. Of course I also had to run into a few of my favorite stores. I got an ah-dorable pair to jeans from GAP where they were 40% off Whoo Hoo...
Saturday we had some projects around the house that needed to be done; cleaning out the flower beds, mowing the yard, laundry and basic cleaning. Saturday night we went back home for a cook-out with Husby's side of the family.
Sunday we went to church, took the puppy for a walk, and I started making a mesh wreath. I'm using the blue and white mesh in hopes it will turn out to be a cute UK wreath! We will see ;)
Like always, this will be a crazy week! I have some great things going on.
Today I'll be making Banana Wraps with a group. Tomorrow I'll be filming a TV segment on healthy after-school snacks where I'll also show this little treat!

Spread 1 tablespoon peanut butter on one side of 100% whole wheat tortilla. Then spread 1 tablespoon strawberry fruit spread or strawberry jelly on top.
Sprinkle 2 tablespoons of seedless raisins over jelly.
Place banana at one end of tortilla. Roll tortilla up to cover the banana
Use a sharp knife to cut in half.
The rest of this week is filled with meetings!!

The perfect afternoon snack!
Core the apple; slice into at least eight slices, about 1/4-inch thick.
Spread a thin layer of peanut butter on one side of an apple slice.
Sprinkle with a few raisins.
Top with another apple slice. Sprinkle the top of your sandoodle with a little cinnamon sugar.
Serve and enjoy!

It's Friday, It's Friday
Happy Happy Friday! Can you tell I'm doing my Friday dance?
This weekend Husby and I are traveling with the volleyball team! We have a tournament in our hometown so it will be nice to catch up with some friends and family.
Don't forget about the
giveaway I'm having in honor of the volleyball team!
Remember Husby's best friend that got married last month?? This family is having a surprise birthday party for him on Saturday. I'm so glad we will already be in town so we can celebrate with everyone. We always have the BEST time with them.

Serving a vegetable tray at your next event? Use this simple yet, oh so adorable way to place your vegetables.
1st step... Wash all Produce
2nd Step... Cut the top off the green bell pepper and remove the seeds
3rd Step... Cut red pepper, yellow pepper, carrots, and celery into strips
4th Step... Pour 2 tablespoons of low fat dressing into the bottom of each snack cup
Last Step... Place equal amounts or red pepper strips, carrot strips, celery strips, and yellow pepper strips into each snack cup, then start dipping and snacking!
Although, you could totally eat these as a snack I love to make these when I'm hosting any event where I will be serving a vegetable tray. Sometimes I will let people make their own snack cup but a lot of the time I will just use the green pepper as a cute bowl. You could fill it with your vegetable dip and place a spoon inside the pepper.

Husby and I have NOTHING on our refrigerator and I hate it! I have been searching for the perfect magnets since we moved into our house but I have had no luck. Until the other day... Husby is the volleyball coach at his high school. We just love these girls. They are so inspiring! Husby's school is a very low income school and the volley ball team has NOTHING. I mean uniforms...notta. No money to do anything.

A wedding day is so special and it means so much when someone asks you to be apart of their day. Husby and I were blessed to be a witness of Chelsea and Adam. Husby was Adam's best man in the wedding. What an honor? Husby, the groom and 5 other guys all have gone to school together since the 1st grade. They have been best friends for the past 20 years. They have adopted us wives into the club... thank goodness ;) This group of friends are more like family. I just love have such amazing people in our lives.
The wedding was absolutely beautiful. I loved her colors. Don't you?

This isn't a great picture but the recipe is too tasty not to share!
Strawberry Spinach Salad
1 pound spinach, trimmed
1 pint strawberries, cut into slices
1/2 cup sugar
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1 1/2 teaspoons minced onion
1/4 teaspoon Worcestershire sauce
1/2 teaspoon paprika
1/4 cup cider vinegar
1/2 cup vegetable oil
1/4 cup almonds
Rinse the spinach and pat dry. Toss the spinach and strawberries in a large salad bowl. Process the sugar, sesame seeds, poppy seeds, onion, Worcestershire sauce, paprika and vinegar in a blender. Add vegetable oil gradually, procession constantly. Pour over the spinach mixture and toss to coat. Sprinkle with almonds. Serve immediately.
I love to make the poppy seed dressing on the weekends and take it with me for lunch all week long!

Happy Monday Ya'll!!!
Can you all believe it is August 1st? I sure can't. Where has this summer gone??
Although, this summer has been ah-mazing, I'm still SOOOO ready for fall.
I have a crazy week ahead of me. Lots of work and a little play. I 'm having a dinner party on Wednesday but other than that this week is going to be no time for fun.
On another note, I'm looking for a new book to read. Have any of you all read "The Help"? The movie looks fabulous and I have heard the book is also really good. What other suggestions do you all have?
I'm normally not a huge book reader but for some reason I feel that reading a book might help me to feel like I am having some 'me' time. And at this point I REALLY need some 'me' time. I feel like I have been working so stinkin much lately!

Since we have moved into our new house (a year ago) we have never had a family barbeque. You know, the ones where you invite everyone you know...? So we decided this was just the weekend for that. We had around 15ish people come and everything turned out great. Well, besides the weather. Because it rained on and off all day and the high was 98 degrees it was super humid and sticky. So, the backyard barbeque turned into an indoor barbeque! But that was okay.
Some of our friends also came and ended up staying the night. We had such a wonderful day. I love catching up with family and friends; getting filled in on everything that is happening back home.
This was a big day for my little brother who introduced his new girlfriend to the family. She was super nice and I'm excited to get to know her more.
The day was perfect. We should totally do this more often!
