I baked Grape pie last week.
Fruit supplier gave us free grape. then staff requested to me make dessert.
So I baked this pie
I cooked grape and dried apricot without any sweetener.
but, It's very sweet.
Staff grape fillig.
Cover wiht pie dough.
Score the surface of pie dough and bake.
This is Sumptuous pie!!!

Buckwheat sauce have good texture and flavor

I didn't add any sweetener for this corn bread.
Serve with tomato sauce, good for breakfast of light meal.

I made these dished for lunch time deli counter.
This is vegetables pan-cake wiht hattcho miso suace
This pan-cake filling is carrot, died shiitake, green capsicum and sesame seed.
this is good savory snack.
This is Steamed vegetable tofu with ginger sauce
press the tofu for remove excess water. mush the tofu and mixt with braised vegetables, seasoning and starch. staff it in the rouned mold then steam. easy and tasty dishes.

I conducted cooking
demo of Japanese Sweet (it's called WAGASHI, 和菓子)
Sweet potato chakin shibori with Adzuki filling and
Uirou (chewy steamed brown rice cake)
Yellow color is sweet potato, green color is
mixed sweet potato and Matcha powder.
I use Rice malt for Adzuki (red bean) paste
filling.
Japanese tea
ceremony (Chado,茶道) demo with Japanese sweet.
Teacher came from Japan. She is Shojin Ryori ‘s
teacher (Japanese Vegetable dish, 精進料理) “Mari Fujii”. Published some Shojin ryori books in Japan. One of
her book transkated in English.
Her Matcha tea was very nice!!!

Students cooked delisious Macrobiotic dishes! It’s Evaluation
potluck party of Macrobiotic Basic couse.
I prepared lotus root cake with shiitake herb sauce (upper left
above the photo). And crockwise, carrot cake, Apple kudzu and baked temphe.
Seaweed vegetable roll and sesame dressing
Rice ball, aomond coated brown rice and walnut coated brown rice.

Osechi-Ryori (お節料理) is the traditional Japanese New Year’s
foods. First introduced during the Heian Period, osechi-ryori is basically a
bento (boxed lunch box) eaten during the first 3days of the New Year. Each dish
and ingredient in osechi has meanings, such as good health, fertility, good
harvest, happiness, and long life.
Traditional
Osechi-Ryori is very sweet. Because Osechi-Ryori for 3days, add sugar can be
keep longer.
This is the
Macrobiotic style Osechi-Ryori. So I didn’t add much Sweetener like a
traditional style.

Mochi (pounded sweet rice cake) in clear soup,

I made “Osechi-Ryori”.
Osechi-Ryori (お節料理) is the traditional Japanese New Year’s foods.
Datemaki (伊達巻き) is the popular dish of “Osechi-Ryori”.
Original Datemaki
is made of Egg and white fish paste. I arranged Macrobiotic style!
This Datemaki is
made of tofu and pumpkin.
I made tofu and
pumpkin dough and bake.
Bake it until
surface is golden brown
Turn it over and
roll tightly like sushi roll. These steps have to be quick while dough is hot.
For keep the roll
shape, roll by bamboo mat and cool it down. Slice it next day.
Customer loved
this roll!

use mould for Carrot’s flower shape, but lotus root shape is hand cutting. I cooked brown rice and baley for this sushi
rice. Barley is good for spring season.

might be defficulet to roll first time. Need practice.
Apple
cooks with apple juice, so refreshing and not too sweet!

I
went to picnic with cooking class stutends. It was Poutluck picnic. Student
chosed 1 dish from last cooking class menu and cooked.
We
had early lunch nearby waterfall. It wsa very relaxing.
Student
who cooked “Onigiri” she said she tied to make triangle shape, But she couldn’t
make it then made round shape. I think make a round shape is more difficult.
All
dishes are very nice!

I
conducted cooking class 3 tiems this month.
I cooked Onigiri, Deep-fried tempeh, braised konnyaku and vegetables, pressed salad and energy bar on first claas in this month.
This
is called ONIGIRI in Japanese. This is great picnic snack. This triangle shape
made by hand. I didn’t use mould.I belive most of the Japanese can make onigiri
by hand.
Students saw first time to see hot to make ONIGIRI (rice ball) shape. They
were very interested.
And
this is Deep-frided tempeh and blanched broccoli, cherry tomato
Do
you know “KONNYAKU”? English name is devil’s-tongue. It’s made of konnyaku
potato. Konnyaku is good for clraning intestime!
I
cooked braised konnyaku and vegetabels.
And
dessert was energy bar. All stusents loved this!

recycled my cereal beverage’s box for making these tags.
